Giveaway: Substantial Salads



Those of you who follow us on Instagram know that we took advantage of a beautiful almost spring day to stop by one of our favorite stores, Terrain, for a cooking class and a bite of lunch.  On the menu were sumptuous salads, just in time for our coming-out-of-hibernation diets (yes, contrary to what you learned in school, female mammals who hibernate in the winter months and drink lots of wine tend gain weight, not lose it!)  Using award winning chef Caroline Hofberg’s book, Substantial Salads, as a guide, our charming chef walked us through the techniques of poaching salmon, smoking hazelnuts, roasting chicken and making a creamy dressing.

While most of us think of salads as a lunchtime staple or summertime dish, the recipes found in this book are filled with rich and hearty ingredients and would be perfectly satisfying meals any time of year.  We dined on three that were as lovely to look at as they were tasty to eat: Beet Quinoa with Chicken, Creamy Potato with Poached Salmon and Cauliflower with Blue Cheese and Turkey.  We were so happy with our class that we bought several copies of the book – two for ourselves and one to give away today!

    Yum!!! I love Asian chicken salad, Tex Mex salad, a really good tangy Caesar, any Mediterranean type of salad and love them with lots of texture, crunch and interesting tidbits. Would love to win the book, maybe it will give me the jumpstart I need to get my own out of hibernation diet in gear!

    Looks like a lovely book! I’ve learned to eat a bit of protein (egg, chicken, etc.) on my salads along with a bit of fruit to give it a healthier take ~ working well for me!

    I love to “build” my own salad at our local French bistro. The ingredients I choose just depends on the day and my mood. The book is beautiful and I would love to have it. The goat cheese, berry, and candied nut salad looks and sounds amazing. Thank you for posting the book on your blog.

    We eat salds almost every night for dinner. They are quick to pepare, healthy, and delicious. I love cauliflower so I would love to try the cauliflower, blue chees and turkey salad.

    What a fun event and a beautiful book. I was hoping to ditch those hibernation LBs before taking off for Europe and a big old carb fest, but they seem to not be budging. This book could be exactly what I need for setting things to rights when I get home. Salads really are one of my favorite things to eat, year round! We have a French bistro up the street that does a lovely herbed green salad with deliciously roasted chicken on it – I could eat it every day. In the summer, I love to make one with grilled salmon, peaches and quinoa – perfect with a glass (or two) of rosé!

    My favorite combination is baby greens, white tuna, mandarin orange slices, Macadamia nuts, and a dressing made with a tsp of mayo, a cup or so of plain yogurt, and a splash of lemon juice.

    I love Terrain…it is such a beautiful store. I make a salad every night with dinner, but would love to make more salads FOR dinner. I love spinach tossed with a light orange vinaigrette – you can add anything, but I love pears, pecans and blue cheese. Have a beautiful weekend, ladies! xoxo
