Ah, the mighty kale… Chock full of vitamins (A, C and K to name a few) and minerals, it’s one of those dark leafy greens we once thought looked better in a bouquet than on our plates. Deb from the Smitten Kitchen got it right when she said “the world would be a better place if we could all stop pretending that kale tastes good.” Yup, that’s pretty much how we felt until we did our cleanse last spring and ate kale every which way (in a juice, as a smoothie, raw, steamed, baked and sautéed!)
Now, we’re looking forward to kale being in season… and can’t wait for the local farmers’ markets to be selling this autumn staple. While kale salads do feature prominently in our menus, cooler fall temps allow us to cook up some warmer fare. Here are some of our favorite recipes… even the boys love the chips and mac-and-cheese!

Funny my son has gotten very into juicing and kale seems to play a big role in it! I have to say I have a new found love for kale…not only is it surprisingly tasty but its so good for you. We tried making kale chips..the first batch was burned but the second one with a little sea salt was quite good!
I’m a big fan and try to have it in my morning smoothies…love it in flowers too!!
Yum! I love kale! Right now, my favorite way to consume it is just through it in a blender with some lemon juice, xylatol and fresh ginger. I keeps me going in the afternoon. These recipes look delish, too. And it does look pretty in a bouquet. Wish I had a garden full of it!

Yummy! It’s so good in the white bean soup. I find that if it’s sliced very thin you can add it too all kinds of things to boost nutrition .. and not taste it:)

Love Kale….we fry it a tad with garlic and crumble a little bacon on it….its delicious!
Oh wow I did not know that they used to use Kale for bouquet I learned something new today that soup looks delish.
